Xavier Marcel Boulestin, the famous French restaurateur and chef who dazzled London in the first half of the 20th century, has been brought back to the capital, in spirit at least, with the opening of a new restaurant just off Piccadilly in London's West End.

Noted restaurateur Joel Kissin, owner of Boulestin on St. James's Street, sought inspiration from the Frenchman's style throughout, from the pictures on the walls through to the offerings on the menu.

IBTimes UK went to Boulestin and spoke to Kissin about his new venture.
