In 2024, his tech company merged with Chazki, a company focused on transportation and delivery services for e-commerce and retail. To this day, he serves as the CEO of LOK, per Cosmopolitan.

He's also worked with Coca-Cola Femsa, which creates the Mexican Coke glass bottles.

Baillères has a rare physical trait called heterochromia, which results in a person having two different eye colours or variations of colour within one or both eyes. According to the American Academy of Ophthalmology, the condition can be present at birth or develop later in life due to injury, illness, or certain medications, and is usually harmless.

Baillères is the son and heir of one of Mexico's most prominent business dynasties. His grandparents, Teresa Gual and Alberto Baillères, built a vast fortune through the mining giant Industrias Peñoles.

The family also controls the conglomerate Grupo BAL, currently chaired by Gonzalo's uncle, Alejandro Baillères.
